I have create a rule to populate elasticsearch index.
Is it possibile configure the reference fields, now there is only ids, but it would be easier if other fields had also passed.

I don’t understand if it is possibile using Document option

It is possible with the document option. You have to select Liquid to create a liquid template:

You can then resolve references:
